There is the ethical argument, there is the climate argument, and there is the economic argument. Cows in particular demand a lot of resources to produce. How exactly artificial production compares to traditional production could have huge economic scalability and reduced GHG emission, all while preventing suffering.
Of course the IP of such a method of production could resemble a Monsanto gone wild, with meat production mainly concentrated in only a few key corporate interests as opposed to the currently more decentralized model.
