Max was a side character to his own movie franchise

He wasn't a side character. He got more screen time than Furiosa.

But the reason she was so important to the plot was (according to the director) because the plot revolved around a bunch of female sex slaves being liberated, and as such the main rescuer had to be a woman in order to have the most believable motivation - to rescue her fellow girls.

On top of that, the character he wrote for Max was a raging feral who was a complete loner who would have very little invested in working with a bunch of strangers to help their cause. In the Road Warrior, Max's connection to those survivors he helped was very tenuous and unbelievable. Like he wasn't really a part of their story either. He was just a stranger that showed up and helped them for a bit. Same as in Fury Road.

Why the ever loving fuck are they drinking breast milk over water?

The production of water doesn't have a victim. Nor does the production of the vegetables. The mother's milk thing however made cattle of human beings, which is exceptionally evil.

You'll notice at the end, it's the milk women who turn on the water, showing that now that the evil tyrant is out of the way, they don't have to be farmed for their breast milk anymore.

As for why the heroes drank it on the road, it's because that's what the tanker happened to be filled with, because it was supposed to be a trade run with gastown and the bullet farm.

Fury Road is respected among film buffs because it does a lot of things right. Off the charts tension and excitement. Vibrant, well-defined characters. Perfect pace (there are zero boring parts but not so fast paced that you lose track of the story). Emotionally engaging plot. The cinematography is incredible. Every shot is a work of art. Minimal CGI. Mostly practical effects.

Just forget the woman thing. It's not one of those "girl power" movies. A woman is in a central character role for practical plot reasons, not for the sake of "wokeness". If you go into it with the attitude that it's a feminism movie, you're obviously going to hate it.

Like if Alien or T2 came out today, you'd probably be suspicious that they were more "woke feminist" films and then you'd pre-judge them and hate them.
Not all female lead movies are like that. Even some recent ones. Annihilation for instance. All female cast, not a shred of "We're awesome because we're women!" in it.
