As far as I see the Dems aren't blocking the recounts in Wisconsin and Georgia. They are blocking the lawsuits in Pennsylvania, which are about mail-in ballots that arrived after the 3rd. Though, even if Trump somehow wins the lawsuit and throws out all ballots that arrived after 3rd. he will be still short. Only about 10,000 ballots arrived after 3rd. He is over 50,000 votes behind in PA.
Maybe you see on Twitter and Reddit some leftists reeeee about recounts, but in reality they Dems have no standing to stop the recounts. And I personally don't think that they will change something. Biden will still win Georgia and Wisconsin. But this is my personal opinion. I could be wrong. And with these two states going to Biden ...
I think the bigger legal issue was voter stations not complying with voting regulations to allow poll watchers proper access. Even after a court order to give poll watcher proper access they simply moved the vote counters back farther away, definitely shady stuff there.
This proper access thing shifted so much in the recent days. At first Trump said that there were no Republican poll watchers, then his lawyers had to walk back this statement in front of the court. I don't know how this will play out.
And they only argue that in PA. Even if he wins PA through a lawsuit, he will still need to overturn the results in several other states, where Trump can't argue about that point.

People involved in this matter are saying that it wasn't the machine that switched the votes. Someone switched it after getting the right results from the machine.
I expect the hand counts to differ quite a lot from the tabulation machines.
We will see in a week when Georgia completes their manual recount. If it doesn't differ significantly from the machine count, then this Dominion theory is more or less out of the window.
