I have a friend who is an MLA and I asked them about mail in ballots. They told me that they're counted in a similar way as regular ballots, with poll workers there and the candidates and scrutineers present if they choose to be.

I also love the idea of a receipt that the voter can check post election to make sure their vote was counted, such as is outlined in this gentleman's TED talk. (Though I'm not a fan of his particular method, but I do like the concept.)
