I feel lucky that I got it before covid and I bought my vintage matching SKS before the firearm ban and price increase. I even got my work to pay for my PAL safety course because they had a yearly "educational allowance" that could be spent on unrelated things to work.
If you have a clean history and no criminal record like I do, RCMP won't bother to contact your references. Althought if you have a wife / or had a common law relationship they WILL call her from what I heard.

That is more or less my experience. It only took a month or so. The problem is now all the courses are closed, so like Gunner667 is sorta hinting at you need to basically bribe someone to give you a one-on-one 'course' in their living room.
You can get a sling bow for like $200. It fits in your pocket/backpack and is strong enough to kill a deer/bear etc if you use broadhead arrows. You can also just use it as a regular slingshot as well. I've been looking at getting one myself.
I've been noticing since January that guns and ammo have been flying off the shelves in waves. When the panic starts again there will be nothing left yet again and prices will rise (and never come down). Do your shopping now!
Instant legolas is a good alternative to a gun. A bit pricey though. A cheaper option in crossbow format is this one https://gogun.co/products/cobra-system-r-series-adder-tactical-repeating-crossbow Dont get me wrong, gun is ideal, but if you don’t already have a licence it’s important to have something. As someone else also mentioned a sling bow is another good option since it is so compact. Also getting your gun licence in Canada does put you on the gov radar whereas these non firearm weapons do not. If you know someone with guns though go practice up with them. Even without your licence it’s good to be proficient with guns because if shit really hits the fan, getting a gun is less of an issue than knowing how to use a gun.
Tbh even if you get into a course there’s a waiting period (2 months I think?) before they even start processing your application. Add in all this COVID bullshit slowing things down and I would bet you’d be waiting at least a year or more
Pay for a license that allows them to know you're a gun owner so they can show up unexpected whenever they want. Good Canadian goobers, keep licking those boots and showing Trudeau's goons you're "one of the good law-abiding ones!" only for them to continue to treat you like a criminal anyways.
